How to make miso
1. Ingredients: Meju 5.2kg, Salt 2.5kg, Mineral Water 1.5L -7.5 Tins
2. Cooking Process
(1) Strain the aged meju through a sieve to separate the meju from the soy sauce. Put the meju in a bowl and knead it with your hands to mash it.
(2) (1) Add flower salt to the process, mix well and season.
(3) Sprinkle salt on the bottom of the sterilized and dry jar and press down the miso paste.
(4) Sprinkle salt evenly over the miso.
(5) Cover the mouth of the jar with a dried cotton cloth and age in a sunny and well-ventilated place.
